I will start with what i call: "friday's easy cheese&meat sauce"
ingredients:
-200grams of any meat you want(you can use any meat as long as its diced, you can also use minced meat)
-half a cup of chopped onions
-100 grams of emmendaler(if you cant find emmendaler use some other hard cheese such as parmesan or -gouda)
-125grams of cheddar or brie cheese.
-100 grams of chopped bell peppers or if you want 50 grams of chopped jalopenos and 50 grams of chopped bell peppers.
-table spoon of butter
-4dl of milk (1 and 3/5 cups)
-pinch of rocksalt and pepper
take a large aprox 25-28cm diameter(lil under 1 foot) frying pan and use medium high heat.
start by melting the butter. add the meat. keep stirring and mixing till the meat has a nice color. add the bell peppers and jalopenos(if you used jalopenos) and onions. keep mixing it on the frying pan for another 6-7 minutes. pour in the milk, add little rocksalt and pepper. mix it up well. add the cheese wait till the cheese melts and lower the temp to medium. let it cimmer while you mix it for about 13-15 minutes.
i suggest you prepare mashed potatos or tagliatelle pasta with this sauce.

Midwinter Mens Meal.
Mashed potatos(my style) and beef veggie sauce.
Mashed potatos:
4-8 fist sized potatos(depending on how many are eating 2-4 servings)
150grams(around 1/3 lb) sliced carrots.
1Table spoon of butter.
1 egg.
3/4cup-(1½ for 8 potatos) cup of cream
1 finely chopped onion.
roughly 50 grams of spenach
start by rolling the finely chopped onion in a frying pan with the butter and add in the spenach, roll em quickly but dont burn the spenach. now put them aside. boil the potatos till they are mashable and steam or boil the carrots till they are soft. mash the carrots and potatos and mix them. break the egg and add it to the mix. mix it, while adding cream. now add the onion and spenach and mix it again. and your done
Beef Veggie sauce.
250 grams(roughly 1/2 pounds) of beef meat in small dices.
100 grams of cabbage finely sliced.
100 grams of radish finely sliced.
2 red onions sliced half and half (1/4 pieces)
50 grams pickle sliced cucumbers or the same amount of cucumber relish.
5dl beef stock(2 cups)
2½dl milk(1 cup)
2 table spoons of butter.
start by putting the butter in the fryig pan. add the meat and roll them around till they got a good color on them. add the onions and roll them around on high temperature for 2-3 minutes. now add the cabbage and radish and roll it for a while. add the beef stock and the cucumber relish or if you used pickle cucumbers. chop them into tiny pieces and add them like that.lower the temp to mid high put on the cover and let it simmer for 20 minutes. add milk mix it a bit, put the cover back on and leave it there for 15 minutes.
Bon appetit ^^ serve with a nice fresh salad or some rustic bread.

Your stuff sounds good but while I am capable of cooking I do not always enjoy it so it will probobly be a long time before I try any of this lol. However it sounds delicious maybe for the superbowl.

My specialty: Pancakes of saturday
4 eggs
8 dl of milk
2 dl of cremefraiche
1 tsp. salt
2 dl barley flour
3 dl wheat flour
50 grams of melted butter or margarin
2 dl of finely crated carrots
2 dl of finely chopped peach/nectar fruit.
butter/margarin for baking.
-Whip the eggs.
-add milk, creme fraiche, salt in this order mix it a bit, add flour and mix it a long while hard.
-add the carrot and peach/nectar fruit. mix it alot.
-put it in the fridge for an hour.
-add the melted butter/margarin before baking it.
-heat the skillet and butter as hot as you can.
-spread some of the dough on the skillet as a thin layer(aprox 2-3mm)
-flip when the surface is sticky and publes a bit
-bake it till it has golden brown surface on both sides.
serve with either mapple syrup + butter or try cherry marmelade/jam and ice cream.
